While the kids eat an exquisite breakfast of farm-fresh eggs, beautiful berries, and whole wheat toast with local honey, we are scarfing down candy corn and gulping coffee. Get your breakfast back! We discovered an easy and healthy recipe that is made the night before and is ideal for moms on the go.
Busy Mom’s Parfait
Mix 1 cup old fashioned oats with a 6oz container of vanilla or non-fat yogurt. Add 1 tsp flaxseed, 1 tsp maple syrup, and a handful of your favorite berries. Finally, sprinkle cinnamon on top. Cover and refrigerate overnight. We also like to substitute vanilla extract and banana for the maple syrup and berries. Breakfast never tasted so good!
