Strawberry Shortcake Overnight Oats! | Greenwich Moms

Need a quick breakfast recipe that your whole family will love? We love overnight oats, since they can be prepared ahead of time, have plenty of fiber to keep everyone full and focused, and taste great. Thanks to Mike Geller of Mike’s Organic Delivery for sharing his favorite recipe for Strawberry Shortcake Overnight Oats! Make a large batch on Sunday and split it into individual portions for a super quick breakfast all week long.

 

Strawberry Shortcake Overnight Oats

Serves 1

Ingredients

 ½ cup rolled oats

 ½ cup almond milk

 ¼ cup non-fat Greek yogurt

 2 tsp chia seeds

 ¼ cup chopped strawberries plus extra for topping

 1 tsp maple syrup

 ¼ tsp pure vanilla extract

 1 tsp cinnamon

 1 tbsp almond butter

Directions

1 Add oats, almond milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, and chia seeds together in a resealable container. Add strawberries then shake jar or stir with a spoon.

2 Chill in the fridge for at least 4 hours or overnight.

3 Top with fresh strawberry slices and a scoop of almond butter before serving, if desired.
