DOURO’s Mediterranean Seafood Salad
Servings: 2
Cook Time: 1-2 minutes Prep Time: 30 minutes
Seafood
2 oz Octopus, sliced thin 2 oz Shrimp, sliced in half 2 oz Calamari, slices thin
Dressing/Sauce
pinch of Oregano
pinch of Salt
1 Tsp Olive Oil
1/2 Tsp White Vinegar
1/2 Tsp Lemon juice
3/4 Cup fresh pureed tomatoes
Garnish
White Onion, a few thin slices or as much as desired Cilantro leaves, a few leaves
Seafood
Add seafood and a pinch of salt to boiling water and cook for about one to two minutes. Remove from boiling water and add to a bowl of ice water, this will ensure the seafood is evenly cooked and tender.
Dressing
In another bowl add: cilantro, salt, olive oil, vinegar, lemon juice and fresh pureed tomatoes and whisk together.
Plating
Choose your desired plate and smear the dressing onto plate, place cooked seafood over dressing, finish with a few sliced onions and a few cilantro leaves
