Recipe in Review | Greenwich Moms

We’re always looking for quick, healthy, kid-friendly recipes. A big hit this week was stuffed zucchini. So quick and easy! Cut the zucchinis in half. Scoop out the inside and sauté the inside with evoo, onion, garlic, salt and pepper in a pan. Add seasoned ground beef to the pan until browned and mix in a tablespoon of tomato paste. Stuff the scooped out zucchinis with the meat mixture and throw some cheese on top. Bake until the zucchinis are nice and soft (about 30 minutes) and serve with rice. Yum!
